| Easy Breakfast Ideas Part 5 - Submitted by Blog Readers
It's usually just my husband and myself, and he works late hours. So what I usually do is make muffins and quick breads that freeze well. I individually wrap them and put them into my "breakfast bag" in the freezer. We just reheat what we want. When our daughter's here, I like making oatmeal in the crockpot. Other than that, we eat cereal or english muffins with nut butter, and fruit. Saturdays I make a biggish brunch, usually eggs, "sausage" (actually extra lean ground beef with sausage seasonings mixed in) and grits. Sometimes I make fruit salad the night before. -Anonymous
Ahh, yes, breakfast... That too has been something I have been learning.
Here are some things I have learned in the last couple years. On Fridays or
Saturdays, I like to make a big egg casserole (let me know if you're
interested in any recipes) as my husband likes a hot breakfast to take to
work. After the casserole has cooled, then I just put each individual
serving in little containers and it is ready for him to take to work.
Usually, there are extra servings and then my son and I will have some for
breakfasts that week or I will freeze them in individual portions again (for
those emergency, no breakfast days!). Every week I make a different
casserole. Since my son and I eat breakfast after DH has gone to work, we will either eat the egg casserole, a hot cereal, muffins, or... cold cereal confession
time!). I am trying to get more consistent about preparing hot cereal for
us.
For Sundays, we want a good breakfast without any work. So, I make muffins
throughout the week and pour the batter into the muffin tins (in muffin
foils) and freeze them without cooking. (After they are frozen, then I take
them out of the tin (still in foils though) and put in a freezer baggie).
When it's time to cook them, you simply add 10 minutes to the baking time.
Then there's no mess on Sunday and you have a hot breakfast! The other tip I recently learned about Sunday breakfasts, is to make granola bars on Saturday (again I have recipes if you're interested) and then you have another easy breakfast. If you have to, you can eat them on the go! Good snack too. I recently learned this tip, so I have not tried it as of yet. I have also been wanting to dehydrate some fruit roll-ups. That would be another easy breakfast.

I usually take one afternoon to bake up two or three dozen muffins of different flavors and maybe some waffles. These are put into freezer bags or boxes. Muffins are easily microwaved and the waffles can be popped in the toaster. We frequently have hot cereal; farina, oatmeal or seven grain or I'll make puffed oven pancakes, which are quick to throw together and the oven does the rest. -Michelle

Mondays: pancakes & bacon
Tues.: Egg burritos
Weds.: Oatmeal/Warm cereal
Thurs.: Egg sandwiches
Fri.: French toast & protein
Sat.: Cereal, PB toast
Sun.: Gravy & biscuits & eggs
Now, of course, this is all subject to change at a moments notice!! My husband does not like big breakfasts; so he eats some cottage cheese and fruit on his way out the door. - Kelly
Breakfast at my house varies from morning to morning. Let me say we begin each morning with breakfast and devotions. It was not always this way. It has been only in the last two years we added the devotions. When my son was little we had various breakfasts that included oatmeal old fashioned, eggs with various meats, pancakes or frozen waffles. Now he is older and alot of mornings he chooses cereal. But I keep hard boiled eggs in the frig for him. He no longer eats any other kind of egg. This way he can have an egg and toast with cinnamon any time he wants. I keep bisquick on hand for things like biscuits and pancakes and such. It only takes a few minutes to whip up the batter and your on your way. We also like frozen steak or sausage biscuits. I have discovered that to heat them use reheat button on the microwave and you don’t make them hard as rocks. It heats them all the way through with out over cooking. I have made things like breakfast burritos. which my son wont eat but hubby will. They are so simple. Flour tortillas,
filling mix is made of browned sausage, scrambled eggs and hash browns and cheese. You can of course add peppers, onions, mushrooms whatever else you like to the mix. Here is what you do. Brown your sausage all crumbled up and drain it. Cook your hash browns in a separate pan. When they are done you will add the sausage mix well and make sure it is hot all the way through. Next add beaten eggs. The amount of eggs depends on how many your are feeding but figure at least one egg per person. Cook the egg thoroughly by mixing it with the meat and potatoes until done. The last thing you add is the cheese so it will not all melt away. You will spoon this mixture onto the tortillas and roll them like a burrito. I have stored and reheated this and as with most good casserole dishes it is better the next day. Enjoy. -Tanya
