| Easy Breakfast Ideas Part 2 - Submitted by Blog Readers
We have breakfast every morning. On Saturday and Sunday mornings we have cereal and milk, but all the other mornings we have a real meal. Daddy likes a big breakfast, and since we only eat two meals a day they have to be rather filling. He doesn't eat on Sunday mornings and on Saturday mornings someone usually makes him some eggs and toast.
To be honest, planning breakfasts is very difficult for me because it's hard to make something other than eggs (and almost no one here likes them) that is going to keep everyone at least half way satisfied till dinnertime. That on top of people who complain about eating pancakes now it's turned into a frusterating endeavor in a lot of ways.
Here is what we normally eat
pancakes
breakfast burritoes (frozen hashbrowns, a can of beans, and a pkg. of sausage in a flour tortilla)
Eggs, biscuits, and sausage gravy
CDL (a hashbrown casserole)
Sausage links, hashbrowns, eggs
Baked Oatmeal
Malto Meal (Cream of Wheat)
Eggs, noodles and Cheese (cook some noodles then scramble eggs with them after draining and sprinkle cheese over all)
Muffins and smoothies (not too often cause daddy isn't exactly thrilled with this)
Quiche Squares
Eggs with bacon in them and toast
Waffles and french toast are good ideas too, but daddy doesn't like them very well. I think the main thing is to know at least the night before what you're going to make that way you have it in your mind what you need to get up the next morning and do -- and you can take out whatever meat might need to thaw. -Olivia
Well, I am fortunate to have a husband who is not a breakfast person. However, I realize as we have more children(we only have a nine-month-old and the next one isn't due 'til August) that breakfast isn't going to be an option anymore. Children need a good meal before they are expected to figure out history and math. ANYWAY, a thought that I have had was that I could make some things(muffins, pancakes, waffles etc.) ahead of time and freeze them. That way, all you have to do is take them out and thaw them and you have an instant breakfast(I wonder if cooked, frozen bacon would taste any good).Making a big breakfast takes time but if you can do things before hand to cut down on the time in the morning it would make it much faster. Even setting the table the night before and setting out your utensils and pans.

Breakfast Pizza
1 pound bulk pork sausage, browned and drained
1 cup hash browns (I use frozen)
1 cup grated cheddar cheese
2 TBSP grated parmesan cheese
Mix together:
4 eggs
3 TBSP milk
Salt and pepper to taste
Layer all ingredients on pizza dough in the order given.
Bake at 375 degrees for 30 minutes.
Personal note: Make sure you have a firm edge or your egg mixture will spill out and make a mess...I know from personal experience.
I make the recipe for pizza dough found in The Tightwad Gazette. It is a firmer dough.
Pizza Dough:
Put the following ingredients in a food processor:
2 cups of flour
1 TBSP of oil
1 tsp of salt
In a glass measuring cup put 2 tsp of yeast, 1 tsp of sugar and 1/2 cup of warm water (about 105 degrees). Let this mixture set about 5-10 minutes until bubbling then add to the mixture in the food processor. Process until a ball forms and rotates 20-25 times. Turn dough out onto a pizza pan. Cover and let rest for 10 minutes and then roll out. -Donna
We like to start the day with protein so I make a crustless quiche (which reheats in individual portions nicely)and we have turkey sausage links and whole grain toast. Most of the time my husband doesn't want to take the time to have a big sit down breakfast, so I make up 2 quiches for the week and the sausage only takes a minute in the microwave and then the toast is quick too. – Mrs. B.
My husband and I love breakfasts, but we hate getting up in the morning, so I usually just bring a yogurt or organic granola bar or something to eat at work. Our plan for when I am at home (and we are really excited about this!) is for my main morning job to be preparing breakfast and waking him up with a cup of coffee. Then we'll have breakfast together. I love what anonymous said about making this a family tradition. I hope we can do our family devotions over breakfast someday.
We like bagels and cream cheese a lot, cold cereal, hot cereal (one of my favorites is hot Grape-Nuts - Grape-Nuts with milk, a little butter, and honey, microwaved for about a minute. Could do this on the stove, too) and eggs and home fries. Oh, and cornmeal mush when it's a special occasion like a birthday. -Becky
You could be very European and simply have coffee or tea (with a lot of milk, which is fortifying) and a rich breakfast bread, like a croissant or a buttered bagel. -Simple and filling, and if you add fruit, it's even rather healthy.
My mother trained her kids to start the day with a smoothie blended from fruit, ice, protein powder, and flax seed oil. Amazingly good for you. –M.
If you want to make pancakes you can mix and fry them the night before, then put them in the fridge. Then the next day you can just pop them in the toaster and enjoy! I read in Everyday Cheapskates's Greatest Tips that you can oil a jelly roll pan and bake the pancakes then then cut out cute shapes for kids. Also, you can do bacon in the oven or fry it all at once, freeze individually, and then pop in the microwave when you want to eat it. I've made smoothies the night before and then put them in the fridge for the next day. You just have to stir them. -Amy
