Simple Nacho Dip


Here's a very simple and yummy layered nacho dip recipe I made for company a few weeks back. My family's been making this for as long as I can remember and it always gets rave reviews.

Layered Nacho Dip

16 oz. can refried beans (or use homemade)
1/2 (1.25 oz) package taco seasoning mix (or make your own)
8 oz. sour cream (or use plain yogurt)
4 oz can chopped green chilies (if you don't like spicy things, you might cut back on this or omit)
2 large tomatoes, diced
6 oz carton avocado dip (or use fresh ripe pureed avocado)*
4 1/2 oz. chopped diced black olives*
1 small onion, chopped*
1 1/2 cups (6 oz.) shredded cheddar or Monterey Jack cheese

Combine beans and taco seasoning mix. Spread bean mixture in a glass 9x13" dish. Layer remaining ingredients in order listed. Serve with Nacho chips. Serves 8-10.

*Depending upon who I am making this for, I will often omit the onion, olives, and avocado. This is a very versatile recipe and one you can't mess up!

Thanks for the tip on making homemade taco seasoning. I have all these ingredients readily available in my pantry. How much money I've wasted over the years on store bought taco seasoning! God bless you and best of luck as wyou welcome your newest little one.

Do you think this would still be tasty without the cheese (probably not, but I thought I would ask!) Non-dairy here.

Lyn, well if you're used to not eating cheese, than probably you wouldn't miss it, especially if you didn't omit too many of the other items. I like it with just the beans, taco seasoning, sour cream, tomatoes, avocado, and olives - but that's just me. I'd miss the sour cream a lot if it weren't there, though. Do you use some type of yogurt or sour cream alternative?

When I make this I saute the onion first. That way it adds a subtle flavor without being too strong for those that don't normally like onion. You can turn it into a casserole also by putting crushed chips on the bottom of the pan first and adding some cooked ground beef. Yummy!
